Lime Out is a floating taco and cocktail bar anchored in Coral Bay on St. John since 2019, where customers eat and drink on the water at a swim-up bar or on floating lily pads. It can only be reached by boat, and the company says guests may not swim, kayak or paddleboard out to it. Its Salt + Lime Express shuttle leaves from the boat ramp next to the Coral Bay dinghy dock, and private boats and charters can also visit. The menu includes tacos, craft cocktails, St. John Brewers beer on draft, non-alcoholic drinks, and bottled wine and champagne. The company says the 2026 season on St. John opened on October 11 and runs until mid-August. It is open Sunday to Friday from 10:30 am to 4:30 pm and closed on Saturdays until December 19, then open daily through April. Weather closures are posted on social media.
