Prosperity Farm Distillery, opened in June 2025, makes spirits from sugar cane grown on Estate Prosperity, on St. Croix's West End across the road from Rainbow Beach in Frederiksted. Cane is cut most days at 7:30 a.m. and milled at 10 a.m., and visitors may watch; the juice is distilled in copper pot stills. As of October 2026, tours start every 30 minutes from 10 a.m. to 3:30 p.m. daily, and booking online costs $5 less than paying at the door. The 55-minute Farm-to-Bottle tour of the cane fields and distillery, $35 online, ends with a tasting of six spirits; the 1.5-hour estate history tour through the old ruins, $75 online, also includes a tasting. Cocktail and make-your-own-spirit classes are offered too. The air-conditioned Farmhouse Bar, with sea views, opens Thursday to Sunday from 4 to 8 p.m. The farm also rents cottages and has an art gallery.
